60g Open To Play protein ( vanilla flavour)
75g fine shredded coconut
75 g grated walnuts
50 g rolled gluten free oats
150 g organic brown sugar
125 g organic butter
1 tbl spoon cinnamon
1 tbl spoon gluten free baking powder
200 ml coconut milk
500 g rhubarb
In a bowl mix coconut, walnuts , Open To Play protein, sugar, oats
and butter ( room temperature ) in crumble , put aside 1 cup .
Add baking powder , 2 eggs ,milk and mix into a batter .
Prepare tin with baking paper , first spread the batter , then spread rhubarb and sprinkle the crumble which we put aside .
Bake at preheated oven at 180C for about 25 mins
