Open To Play Pumpkin seed , carrot, apple & protein muffin



75g Open To play protein ( vanilla or chocolate)

75g ground almonds 

80g golden caster sugar 

1 tbs gluten free baking powder 

2 organic eggs 

50 ml coconut oil 

1tbs ground cinnamon 

1 small carrot grated 

1 small apple grated 

20 g pumpkin seeds

30g cranberries



 30g pumpkin seeds



Preheat oven to 160 C.

Combine eggs, sugar and coconut oil end mix well until you have a smooth liquid .

Mix Open To Play protein , ground almonds , baking powder and cinnamon together separately , then mix into the wet ingredients .

Stir in the carrot , apple , cranberries , pumpkin seeds and mix it through gently .

Fill each muffing cage about 2/3 full with batter .

Scatter the pumpkin seeds for the toping over the muffins

Bake in the pre heated oven at 180C for about 20 mins
